This limited-edition series explores how ancient grain varietals transform the profile of “The Original Wheated Bourbon,” honoring the legacy of Daniel Weller—grandfather of the legendary William Larue Weller.
Following the 2023 debut of Emmer Wheat, this 10-year-old expression utilizes Spelt, an ancient grain primarily cultivated in Europe. Known for a distinct nutty sweetness, Spelt is rarely seen in modern whiskey production. By substituting traditional wheat with this heirloom strain, Buffalo Trace Master Distiller Harlen Wheatley has crafted a whiskey that prioritizes grain character over barrel influence.
“Rather than leaning on barrel innovation, we chose to strip the process back and let the wheat speak for itself,” says Harlen Wheatley, Master Distiller at Buffalo Trace Distillery. “By avoiding specialized barrel treatments and techniques, we were able to focus on how spelt wheat’s natural sweetness and distinct character influence the Weller mashbill.”
Bottled at 94 proof, Daniel Weller Spelt Wheat offers a biscuit-forward nose with notes of freshly baked cookies, clove, and cinnamon. The palate features layers of dried fruit and baking spices with a unique, tea-like floral dimension.

The custom 750ml bottle features a unique compass stopper, with the coordinates of Daniel Weller’s historic Kentucky farm inscribed beneath. Daniel Weller Spelt Wheat will be available in limited quantities at a suggested retail price of $549.99.
