Color: Carmel

Nose: Dark cherry and fig hit your nose followed by heavy rye spice with hint of citrus.

Palate: Dark fruit, with a jam like consistency.  Warm on the palate with a crack of rye spice and citrus.

Finish: Lingering in the chest with dark chocolate cherry

Color: Red Orange

Nose: Rich grape notes, with hints of citrus, cracked pepper, and raspberry.

Palate: This wine finish is better on the second fill, the lingering pinot noir from front to back of the pour.  Gives characteristics that wine drinkers will love but enough punch to keep a bourbon drinker engaged

Finish: Medium, full palate flavors linger.

Color: Mahogany

Nose: Oak, chocolate, and spice

Palate: Of the three pours this one goes down the easiest.  The oak and chocolate notes of the barrel finish mix well with the spicy and malt characteristics of the distillate.

Finish: Medium

Closing Thoughts

This set of three whiskies were very well done by the team at High Bank Distillery.  Each of their pours do such a great job highlighting finishing technique but allow for the base of the whiskey to shine through in a different way with each expression.
