Chattanooga Whiskey New Experimental Batch 035: Centenary Cask Announced

Chattanooga Whiskey today announced the newest release in their award-winning Experimental Single Batch Series: Batch 035: Centenary Cask.

An annual release in the Experimental Single Batch Series, Centenary Cask is an evolving blend of experimental pot-distilled mash bills married and finished in a rare, 100-year-old Oloroso Sherry puncheon. Refilled in the solera style, each annual 100-gallon batch is uniquely different from the last, while containing traces of whiskeys from previous fills.

Batch XXXV is the third release using the centenary cask, which was first filled in 2021. This year’s release sees the addition of two unique barrels, chosen for exhibiting characteristics that would enhance flavors derived from the centenary cask itself, including Chattanooga Whiskey’s signature “Barrel 91” recipe, and a singular recipe made with a wide variety of malted barley and rye.

After these hand-selected barrels were married for over a year in the antique cask, 100 gallons were removed for bottling before new barrels were selected to top up the solera-style barrel once more. Dynamic and ever-changing, Centenary Cask is the perfect new-year whiskey tradition.

Blending may be the final creative act of the distiller, allowing us a chance to further develop harmony and complexity in the final whiskey. What makes the Centenary Cask so distinct actually lies within its constraints. Because the size of the Oloroso cask limits the blend to about 3-4 barrels, each barrel must therefore be carefully chosen to work well together and to balance the bold, antique notes of Oloroso. Batch XXXV: Centenary Cask is available at the Chattanooga Whiskey Experimental Distillery at $69.99 for a 750ml bottle, and available online for shipping to select states on Seelbachs.com. Bottled at 100 proof, expect delicate aged notes of fruit cake, black tea, cigar box and bread crust, with a lightly mineral Oloroso finish.
