BLANCO, TEXAS (June 20, 2024) — Milam & Greene Whiskey is proud to announce the third release of the 2024 Wildlife Collection: Cardinal Single Barrel Bourbon, a unique, cask-strength whiskey. This limited-edition bourbon explores how the Texas Hill Country environment influences bourbon aging, while also highlighting native Texas wildlife to support Texas Parks and Wildlife causes. This year’s collection theme focuses on the birds of Texas, and the Cardinal Single Barrel Bourbon was selected for its rich, red mahogany hues. The bourbon will be available exclusively on the Milam & Greene Whiskey website and in the distillery tasting room starting at 3:00 p.m. (CDT) on Wednesday, June 26, 2024.

Milam & Greene Cardinal Single Barrel Bourbon is named after the beautiful red bird that can be seen year-round in the eastern two-thirds of Texas. Cardinals pass through our distillery property in Blanco, Texas at various times throughout the year, adding pops of red to the trees as they hunt for food.

Our rickhouses are not temperature controlled, allowing the Texas climate to distinctly influence each Wildlife Collection release. The intense heat last summer and the extreme cold snaps this winter have significantly impacted our Cardinal whiskey’s aging process and the amount of liquid lost to the angel’s share. The Wildlife Collection: Cardinal Single Barrel Bourbon

The Milam & Greene Wildlife Collection Cardinal Single Barrel Bourbon is pulled from cask #506, yielding 130 bottles at 129.8 proof (64.9% ABV). Distilled in Tennessee with a mash bill of 84% corn, 8% rye, and 8% malted barley, it was aged for six years and seven months before being brought to Texas for an additional year and six months of aging. Bottled on April 26, 2024, after a total aging period of eight years, one month, and twenty days, this bourbon is a deep mahogany color with aromas of honey, Nila wafers, cherry cordial, and marshmallow fluff. It offers a creamy sweet mouthfeel with notes of pecan sandie cookies, creamed cornbread, and baking spices, finishing with hints of black pepper and eucalyptus.
