Paul Pacult, America’s foremost expert on distilled spirits, celebrates global collaboration, rare craftsmanship, and bold innovation.
Craftsmanship and Collaboration
A Unique Sherry Cask Finish
This exclusive whiskey, crafted from a mash bill of 99% corn and 1% malted barley, is aged for 16 years and finished in rare 50-year-old Oloroso sherry casks from Bodegas Williams & Humbert, a 130-year-old Spanish bodega renowned for its prestigious soleras. Limited to just 48 barrels, the whiskey is bottled at 48.25% ABV, delivering a vibrant and complex profile.
Flavor Profile
The whiskey showcases:
- Appearance: Wheat field golden hue with superb clarity.
- Aroma: Toasted marshmallow, tropical fruits, winter spice, and candied almonds.
- Palate: Tangy orange zest, dried fruit, butterscotch, and grilled pineapple.
- Finish: Extra-long, satiny, with bittersweet perfection.
“Nothing means more to me than spending time with my children on Father’s Day; that’s the greatest gift of all. But for American whiskey lovers, this exceptional release might just be the next best thing,” says Marc Taub, President & CEO, Palm Bay International.
“I believed there was something truly special about this project, which is why I was eager to be a part of it,” says F. Paul Pacult, Jacob’s Pardon Master Blender. “With Jacob’s Pardon ‘Cask Collective’ 16-Year-Old Oloroso Sherry Cask-Finished Whiskey, we set out to craft an expression rarely seen in the whiskey world, with a remarkable depth and complexity, honoring the authenticity and craftsmanship at the heart of Jacob’s Pardon.”
Global Partnership
The release is a collaboration between Marc D. Taub, his son Jake, F. Paul Pacult, and Bodegas Williams & Humbert, under the stewardship of the Medina family. This partnership blends the Taub family’s legacy with the bodega’s sherry expertise, creating a whiskey that honors both American and Spanish traditions.
A Legacy Born from Prohibition
Jacob’s Pardon traces its roots to Jacob and Abner Taub, brothers who bootlegged whiskey during Prohibition to support their family. After a 1929 sting led to their imprisonment, they were pardoned by President Franklin D. Roosevelt in 1935, reigniting their family business. Today, the Taub family continues this legacy through Palm Bay International, crafting whiskeys that embody brotherhood, resilience, and innovation.
