Laws Whiskey House is bringing back two limited edition bourbons just in time for the holidays: the Honey Cask Finished Straight Bourbon Whiskey and the Four Grain Bourbon Whiskey finished in a Cognac Foeder. Both expressions are crafted from Laws’s signature Four Grain Straight Bourbon, then aged in unique barrels to develop complex and distinctive flavors that whiskey enthusiasts crave.
We’re thrilled to reintroduce these distinctive cask finishes just in time for the holiday season. Honey and cognac are two of my personal holiday indulgences; we hope they add a special touch to your celebrations with family and friends while enjoying the richness of Colorado’s offerings.

The Honey Cask Finished Straight Bourbon Whiskey offers a unique twist on bourbon aging, incorporating the influence of local Colorado pollinators. After being aged in barrels that were previously filled with raw honey from Bee Squared Apiaries, this bourbon picks up a subtle sweetness and layers of flavor from black tea, orange blossom, and Rocky Mountain strawberries. The collaboration with local beekeepers highlights Colorado’s terroir, infusing the bourbon with the natural artistry of the state’s wildflowers and high-altitude plants.
The Four Grain Bourbon Whiskey finished in a Cognac Foeder speaks to Laws’s legacy of innovation, using the traditional solera maturation method to enhance its flavor profile. This annual release is aged in Cognac casks before being married in a 50-year-old 1,600-gallon foeder, adding complexity and depth. The result is a bourbon with bold initial flavors of bourbon, followed by notes of stewed fruit, spiced apple butter, toasted wood, and raisin. Both bourbons retail for $84.99 and are available at the Laws Whiskey House Tasting Room in Denver, online, and in select stores.
These Specialty Finishes are a true reflection of Colorado—the flavors, the climate, the grains, and the care that goes into every step. These annual releases are all about pushing boundaries and celebrating the unique story of every ingredient and barrel. The Honey Cask Finish showcases local honey that supports Colorado’s biodiversity, adding a sweetness you won’t find anywhere else. The Cognac Foeder Finish offers a different take on Colorado’s character: Denver is located in a high-elevation desert, meaning the climate is dry, has large temperature swings, and big barometric pressure changes with storm cycles. These conditions, when combined with the solera method, help to create a rich, evolving complexity that deepens with each passing year.
