After more than a decade of training aspiring distillers and industry professionals, Moonshine University will officially conclude operations on December 31, 2026, marking the end of one of the distilled spirits industry’s most influential educational programs.
Louisville-based Flavorman announced the decision Tuesday, saying it will shift its focus back to its core business of beverage development and consulting while exploring ways for Moonshine University’s educational resources to live on through industry partners.
Moonshine University Leaves a Lasting Legacy
Since opening its doors in 2013, Moonshine University has become a cornerstone of spirits education, helping launch hundreds of distilleries and training thousands of students from around the world.
Over its 14-year run, the program has:
- Taught 337 courses
- Educated more than 15,000 attendees
- Helped support the launch of nearly 300 distilleries
- Welcomed students from all 50 states, four U.S. territories, and 49 countries
- Seen nearly half of attendees enter the spirits industry within two years of completing a course
The school became known for offering hands-on instruction covering distillation, production, compliance, and business planning for both new and established distillers.
Existing Courses Will Continue Through 2026
Current and prospective students still have time to participate.
Flavorman confirmed that all scheduled Moonshine University courses will continue through the remainder of 2026, with registration remaining open for upcoming classes.
The company is also actively working with industry organizations to transition Moonshine University’s course materials into existing educational programs, ensuring future distillers continue to have access to high-quality training.
What Happens to the Stave & Thief Society?
Flavorman also provided an update on the Stave & Thief Society, the organization behind the popular Bourbon Steward certification programs.
The program—including both Associate and Executive Bourbon Steward certifications—will continue operating through the end of 2026 while Flavorman explores opportunities to transition it to another organization.
Key dates include:
- In-person certification classes will continue throughout 2026.
- Online courses will remain available until December 10, 2026.
- Additional updates will be shared with members of the Bourbon Steward community as plans develop.
Flavorman Returns Its Focus to Beverage Innovation
Founded in 1992 by David Dafoe, Flavorman has built its reputation as one of the nation’s leading beverage development companies, creating custom recipes and products for startups and global beverage brands alike.
The company says concentrating on beverage development and consulting will allow it to best serve the evolving needs of the distilled spirits industry while supporting future educational efforts through partnerships with established trade organizations.
In a statement, Dafoe thanked the thousands of students, faculty members, clients, and partners who helped shape Moonshine University’s legacy.

For many in the bourbon and craft spirits world, Moonshine University represented the first step toward opening a distillery or advancing a career in the industry. Its closure marks the end of an important chapter in modern American distilling education.
While the Moonshine University name will sunset at the end of the year, Flavorman hopes its curriculum and educational mission will continue through new partnerships, preserving a legacy that has helped shape the modern craft spirits movement.
