Jake’s Tasting Notes: Dingle Distillery
Nose: This whiskey is heavily influenced by the maturation process. While you may assume it would be a majority of PX Sherry Cask notes, the ex-bourbon cask influence shows up nearly 50/50. Sweet notes of vanilla and honey that are quickly balanced by white pepper, dates, and figs.
Palate: Much like the nose, the palate is very balanced. It starts with sweet notes of honey that quickly bring forth hints of oak tannins and spice. It finishes with jammy flavors of dates and figs, as one would expect from its nose.
Finish: Long and slightly spicy
Closing Thoughts:
Welcome to America, Dingle Distillery. This new US-exclusive is an Irish Whiskey that I believe could covert American Rye Whiskey drinkers. The spice and balanced flavors closely mirror Kentucky Style Rye Whiskey. This single malt will be added to my whiskey rotation moving forward.
