Southern Distilling Company has announced the return of its Southern Star Bourbon Finished in Honey Barrels, following overwhelming demand for the inaugural release in 2024. The second batch of this limited-edition cask-strength bourbon (108.4 proof) will be available starting November 8, 2025, at the distillery’s tasting room in Statesville, North Carolina, and select ABC stores across the state. Crafted with Local Grains and Wildflower Honey Barrels
This year’s release maintains the signature production process that made the first batch an instant hit. The bourbon is crafted from locally sourced grains and finished in barrels drenched with wildflower honey. The result is a rich amber spirit with aromas of sweet butterscotch, earthy spice, and toasted oak, followed by toffee, delicate honey, and floral notes on the palate and a creamy, balanced finish.
A Holiday Release Designed to Sell Out Fast
“We first launched this expression last year as a distillery exclusive, and it sold out almost immediately,” said Pete Barger, co-founder and CEO of Southern Distilling Company. “We knew we had to bring it back ahead of the holidays, and while this year’s release will be available in our Statesville Tasting Room and at select ABC stores across North Carolina, it’s still a limited run. We don’t expect bottles to stay on shelves for long.”
Special Cocktails and Gift Bundle at the Distillery
To celebrate the November 8 launch, Southern Distilling Company will feature four honey-forward cocktails at its Statesville Tasting Room, including The Buzz, made with Southern Star Double Shot and the new Honey Barrel bourbon. A distillery-exclusive holiday gift bundle priced at $65 will also be available, featuring a bottle of Southern Star Bourbon Finished in Honey Barrels, barrel-aged honey, and hot honey brittle.
