Starlight Distillery has announced the release of its Estate Collection 7-Year Cask Strength Bourbon, an annual expression produced in collaboration with the Estate Whiskey Alliance.
Made grain-to-glass on the Huber family estate in Borden, Indiana, the limited-release bourbon highlights the distillery’s approach to estate whiskey, with 80% of its grain grown and harvested on estate land.
Starlight Estate Collection Bourbon Aged Seven Years
The bourbon features Starlight’s signature three-grain mash bill, built around heirloom corn and Indiana rye. Each barrel underwent sweet mash fermentation and double pot distillation on the distillery’s Vendome copper stills before entering the barrel at low proof and aging for seven years.
The casks matured in Starlight’s original red warehouses, where the distillery says the aging environment contributed to the bourbon’s body, oak integration, aromatic richness and complexity. The Huber family members Ted, Blake and Christian selected the barrels, which were bottled at full maturity without reducing the whiskey below its cask strength of 110.8 proof.
Tasting Notes for Starlight’s 7-Year Bourbon
Starlight describes the bourbon’s nose with notes of caramelized sugar, toasted oak, dried fruit, vanilla and baking spice. The palate features brown sugar, French caramel, coconut and plum, while the finish is long and warming, with lingering oak, spice and confectionary sweetness.
“Estate whiskey is how whiskey was always meant to be made: grown, distilled, aged and bottled on the same land,” said Christian Huber, seventh-generation distiller. “Our family has farmed this ground for 7 generations, and our products carry that place in every glass. This is a whiskey that couldn’t be made anywhere else, by anyone else.”
What Estate Whiskey Certification Means
According to the Estate Whiskey Alliance, certified estate whiskey must be produced entirely on the same estate, including grain processing, fermentation, distillation, barreling, aging and bottling. At least two-thirds, or 67%, of the mash bill’s grains must be grown on estate-owned or controlled land to qualify for Estate Whiskey Certified status.
With 80% estate-grown grain, Starlight’s Estate Collection exceeds that minimum threshold. The certification emphasizes the role of the grain’s origin, soil, water, region and climate in shaping the finished whiskey.
