The Macallan has released The Macallan TIME : SPACE Sherry Cask. It is the first whisky influenced by casks seasoned with Valdespino sherry since The Macallan took ownership of the Jerez bodega. Owning Valdespino lets The Macallan oversee every step of sherry seasoning, from oak to glass.
The whisky first aged in European and American oak sherry-seasoned casks on the Speyside estate. It was then married in some of the first 200 sherry casks seasoned at The Macallan’s Valdespino bodega in Jerez de la Frontera, Spain. Those casks were built in The Macallan’s own Jerez cooperages and shipped to Scotland for filling in 2024, the brand’s 200th anniversary year.
Tasting notes
- Aroma: Sherry-soaked raisins, figs, Medjool dates, frangipane, cinder toffee, caramelized nuts, dark chocolate truffles, warm spice
- Palate: Sultanas, dates, apricot, ginger cake, treacle toffee, bramble jam, chocolate-coated cherries, clove and cinnamon
- Finish: Long and warming, with wood spice, cocoa nibs, espresso and gentle oak
