Jake’s Tasting Notes: Castle Hill Batch 3:
Nose: Big bold nose that I could smell from almost a foot away. Waves of oak and vanilla is what met my nose from distance. As I went in for my first smell, dried apricot slight spice, and vanilla met me. As I went back after walking away there were stronger notes of chocolate and an herbal, almost flowery nose.
Palate: The palate was very tasty; chocolate covered almonds with heavy notes of cherry and herbal tea.
Finish: Lingering oak, cherry, chocolate and almond butter with a nice medium finish.
Scott’s Tasting Notes: Castle Hill Batch 3:
Nose: cracked black pepper, toffee/butterfinger candy bar, damp leaves, and leather.
Palate: Rich and dark with notes of raisins and dates, roasted and salted almonds; this bourbon is sweet and savory.
Finish: the finish is medium to long, as one would expect from a higher aged bourbon. The notes which linger are toasted wood and dark fruits.
Closing Thoughts:
