What Makes Old Elk Slow Cut Bourbon Unique?
At 88 proof, Slow Cut Bourbon features Old Elk’s proprietary Slow Cut™ Proofing Process, a technique designed to preserve delicate flavors by extending the standard proofing process up to 10 times longer than traditional methods.
Why Does Slow Cut Matter?
During proofing, water is added to alcohol to achieve the desired proof. In conventional methods, this is done over one or two days, which generates heat and burns off many of the whiskey’s lighter, more nuanced flavors.
Instead, Old Elk gradually incorporates small amounts of water over several weeks, keeping the whiskey cool and allowing the full spectrum of flavors—developed during mashing, fermentation, distillation, and maturation—to shine through.
