Chattanooga Whiskey Introduces Unique White Port Cask Finished Bourbon

Chattanooga, TN (February 8, 2024) – Chattanooga Whiskey announced the latest release in their Barrel Finishing Series: White Port Cask Finished. This marks the independent distillery’s fourth offering in the limited-edition series, an annual release that celebrates the union of Chattanooga Whiskey’s unique Tennessee High Malt style with a variety of classic finishing casks.

Since our Barrel Finishing Series began in 2021, our goal has always been the same: enhance the character of both the whiskey and the finishing cask. To do that, our team gets specific. Instead of using just one mash bill, we pull from our wide library of recipes that can speak specifically to the character of the finishing cask; and instead of using finishing barrels from a large area, we select barrels from very specific regions with their own unique terroir.

For this fourth series release, Chattanooga Whiskey revisited the famous port style – this time selecting white port casks from the Carrazeda de Ansiães region of the Douro Valley. Known for its high growing elevations and steep inclines, this small growing region within the Douro Valley yields ports with rich and fruity aromatic complexity – boasting sweet notes of honey, vanilla, and stone fruit.

To highlight and enhance the qualities of these finishing barrels, a custom blend was created of three bourbon mash bills, including a coveted wheated bourbon recipe containing three varieties of toasted and roasted wheat malts.

Knowing that white port is characterized by a bright, fresh fruit-forward profile, we specifically chose a blend of our more delicate mash bills to highlight and support the cask finish. Our signature 91 bourbon mash bill brings honey and citrus notes; our wheated bourbon brings baked confections and vanilla; and a one-off green malt bourbon adds hints of tropical fruit and lemongrass. Together, the blend creates a dynamic and approachable whiskey with top notes of white peach, shortbread, and coconut, followed by an orange marmalade finish.

Aged for over five years, including two years in the white port casks, Chattanooga Whiskey’s White Port Cask Finished showcases a dynamic balance between the flavors of confectionary – sweet malt and luscious ripe fruit – highlighting the best of both whiskey and wine.

White Port Cask Finished will be available at the Chattanooga Whiskey Experimental Distillery on February 9, 2024 and on shelves in select states (TN, GA, LA, SC, KY, FL, TX, IL, IN, and WI) in February at $59.99 for a 750ml bottle. Limited quantities will also be available online for shipping to select states on Seelbachs.com in late February.
