Texas Distillery to Launch 11th Edition of Its Coveted Cask-Strength Bourbon.
Garrison Brothers Distillery, the first legal whiskey distillery in Texas and the first outside Kentucky to produce authentic, handcrafted, corn-to-cork bourbon, has announced the release of its 2025 Cowboy Bourbon®. The first 1,000 bottles will be available on Saturday, December 6, 2025, beginning at 8 a.m. at the distillery in Hye, Texas, on a first-come, first-served basis.
This marks the 11th annual release of Garrison Brothers’ most sought-after whiskey. Each bottle of Cowboy Bourbon is hand-selected by Master Distiller Donnis Todd and aged for at least eight years before bottling uncut and unfiltered at cask strength.
Aged Eight Years and Bottled at 146.4 Proof
The 2025 Cowboy Bourbon comes in at 146.4 proof, representing what the distillery calls the “pinnacle of craftsmanship and dedication” in its portfolio. Only 10,000 bottles will be available nationwide this year, priced at $249.99 SRP.
First introduced in 2013, Cowboy Bourbon® helped establish Garrison Brothers and the state of Texas on the national bourbon map. Each release is drawn from standout barrels selected by Todd and set aside for further maturation in the state’s extreme Hill Country climate.
Tasting Notes Highlight Texas Character
According to the distillery, the 2025 expression opens with burnt wood, gun smoke, and toasted marshmallow on the nose. The palate delivers black pepper and cooking spice, balanced by plum and apricot for a rich, layered flavor profile.
“It’s strong and mean at first, but the all-encompassing flavor makes your mouth water, and you’ll begin to drool if you’re not careful. The flood of warmth never ends. Layered dried fruits and toasted marshmallows—it’s a Texas chaser you can’t stop sipping,” shared Donnis Todd, Master Distiller, Garrison Brothers Distillery.
The 2025 Cowboy Bourbon will be available in limited quantities at select bars, restaurants, and retailers across the U.S. beginning in mid-December.
