My first ever sip of Redwood Empire Whiskey is the new release Pipe Dream. While I have seen a variety of these whiskeys on the shelf over the years but hadn’t pulled the trigger. With that in mind let’s dive into this whiskey!

Proof: 116.8
Age: Undisclosed
Mash bill: 74% corn, 20% rye, 4.5 malted barley, 1.5 wheat
Style: Bourbon
Jake’s tasting notes: Pipe Dream
Nose: Letting it air out gave me milk chocolate, cherry pop tart flavoring, and a hint of citrus.
Palate: This is a super easy drink at 116.8 proof. The milk chocolate rings true from the nose, followed by some tannic notes from the barrel that are well balanced. Coming back for a third sip it really attacks the side of my palate with a drink sensation that lends to more woody notes.
Finish: the finish is medium to long. The tannic notes really stay true.
Closing Thoughts:
This is a super easy drinker, I would have never guess this was barrel proof. If you are a fan of milk chocolate notes in your bourbon this would be a good pick up.
