10-Year-Old “Symphony of Disruption” Bourbon Honors Founders’ Bourbon Hall of Fame Induction.

Wilderness Trail Distillery is releasing two limited-edition Kentucky exclusives, including a 10-year-old wheated bourbon commemorating the induction of co-founders Dr. Pat Heist and Shane Baker into the Kentucky Distillers’ Association Bourbon Hall of Fame. The “Symphony of Disruption” 10-Year-Old Wheated Small Batch Kentucky Bourbon is joined by an 8-Year-Old Cask Strength Kentucky Rye Whiskey, with both expressions available exclusively at the Wilderness Trail Distillery Visitor Center in Danville, Kentucky.

Crafted by Baker and Heist, Symphony of Disruption is made from three barrels and bottled at 122.9 proof. The name reflects the founders’ musical backgrounds and Wilderness Trail’s approach to challenging conventional whiskey-making practices, particularly its use of sweet mash fermentation. The non-chill filtered bourbon offers aromas of clove, brown sugar, baking spice and cedar, followed by warm spice, caramel apple and crème brûlée on the palate. The finish is described as long and semi-dry, with toasted oak and tobacco. The release is limited to 414 bottles, or 69 cases.

This release celebrates the belief that innovation and tradition can coexist, and that sometimes meaningful progress comes from disrupting the status quo.”

Wilderness Trail 8-Year-Old Rye Highlights the Distillery’s Maturation Program

The second release is an 8-Year-Old Cask Strength Kentucky Rye Whiskey selected by National Brand Ambassador Haley Perros and the Wilderness Trail distillery team. Bottled at 116.1 proof, the rye features aromas of sweet red apple, spice and burnt caramel, with flavors of vanilla pudding, baking spice, tobacco and confectionary sugar. Apple, hazelnut and subtle barrel char carry through the medium-to-long finish. The release is limited to 408 bottles, or 68 cases.

Wilderness Trail Founders Mark Industry Recognition With Limited Releases

Baker and Heist founded Wilderness Trail in 2012 after establishing careers as fermentation experts who worked with distilleries around the world to improve production, consistency and understanding of whiskey fermentation. Their advocacy for sweet mash production and data-driven distilling helped shape the production philosophy behind Wilderness Trail. “We never set out to follow the traditional playbook,” said Baker, Co-Founder and CEO. “We believed there were opportunities to improve whiskey quality through experimentation and a deeper understanding of fermentation. To see those ideas embraced by the industry and recognized by the Bourbon Hall of Fame is incredibly meaningful.”
